His topic is Putting Your Best Foot Forward. Judge Kongsgaard, retiring this year, was appointed to the Superior Court bench of Napa County in 1959 and has served continuously since then. He has presided as Superior Court judge in 30 California counties as well as the California Court of Appeal. He is presently chairman of the California Judicial Performance Commission.

Completing the fall series are, in October, Shakti Gawain, author of the best seller Creatie Visualization, and, in November, radio and television personality Elaine Lynn Willis speaking about Packaging Yourself for Success. The purpose of Winners Circle is to serve the community by offering business, academic, artistic, legal and medical professionals an opportunity to learn new tools and ideas for personal and professional growth. Winners Circle is open to all. The fall series is $15 or $6 per meeting in advance, $7 at the door. This includes light breakfast.

Sebastiani in the kitchen Sylvia Sebastiani, matriarch of the Sebastiani Winery, will give a cooking demonstration next Monday, Sept 24, 10 a.m. at the San Francisco Williams-Sonoma store, 756 Sutter St. In addition to her involvement with the winery, Mrs. Sebastiani is also a master cook and cookbook author. Her book Mangiamo" (which means Lets Eat) is now in its seventh printing and has sold nearly 100,000 copies.

Betty Napa Dear Betty: Saturated and unsaturated are terms given to fats to distinguish their biochemical structure. All fats are made of the elements carbon, hydrogen, and oxygen. Simply stated, a saturated fat is one that has all its available spaces linked with hydrogen. This results in a very rigid structure typically solid at room temperature.

Saturated fats are found mostly in animal products beef fat is the highest in its degree of saturation. Whole milk, cream, ice cream, hard cheeses, butter, eggs, and red meats are relatively high in saturated fats. Palm and coconut oil, although not of animal origin, are indeed highly saturated. Unsaturated fats, on the other hand, are structures whose linkage with the hydrogen molecule is not as complete. Thus, unsaturated fats are much less rigid and are soft or liquid at room temperature.

Unsaturated fats are found mostly in plant products such as soy, corn, and sunflower seed oils safflower oil is the highest in its degree of unsaturation. Research has shown that the foods you eat can affect your blood lipid level (cholesterol level). This is particularly true of foods containing fats. Saturated fats raise your blood cholesterol level more than any other fat. Unsaturated fats, particularly polyunsaturated, tend to lower blood cholesterol levels.

Most of us eat a diet high in total fat. A healthier approach to the fat in your diet is to reduce overall fat, reduce saturated fat intake, and replace some of it with polyunsaturated fat. Cook and bake with vegetable oils, replace butter with margar- ine, use nonfat or lowfat dairy products, and Include chicken, fish, and lean red meat often. Napa County Nutritionist, Napa County Health Department Dear Nutrition Expert: My doctor advised me to follow a low cholesterol diet. Im doing okay but I travel in my job so I eat out a lot. What can I do for meals away from home? Mr. R. C.

Dear Mr. R. This meal pattern of eating away from home is seen often today. Congratulations on following your diet at home; you can continue these good selections when eating out too. When choosing breakfast, have fresh fruit or fruit juice and hot or cold cereal.

Ask for low-fat or skim milk, or, try yogurt or cottage cheese served with fresh fruit. Limit your egg yolks to three a week; have one poached or soft-boiled occasionally. Instead of pastries, have toast, English muffin, raisin toast, cinnamon toast, or a bagel. Check the menu to see if margarine is served. Salad is just the thing for lunch.

Avoid the creamy dressings clear dressings are better. Either include a low-fat protein source (turkey, chicken, fish or cottage cheese) in the salad or have it in a sandwich spread with margarine. A variety of fruits and vegetables could complete the meal. Remember to ask for low-fat or skim milk. Now for the evening meal.
